Baking, cooking, a surge of energy

I took today off -- took a friend to the airport, and when I got home, I got busy.  I'd been wanting to bake some things, and then I got a little crazy.  How crazy?

Last night I couldn't fall asleep; tonight I don't think that will be an issue with all of the baking and washing up I've done (between loads of laundry, etc!).

Quiet Sunday

Sarah and I were quite busy at the Studio yesterday, so I decided to have a quiet day at home today.  I had considered going in to work at the library, but thought I'd be better off if I enjoyed time at home.

We had another cold morning, and I enjoyed lingering over coffee.  I finished knitting Joel's new socks and I also finished a child's hat -- to be donated.  I used a basic knit hat pattern, but since I was running low on the pink yarn, I purchased a coordinating blue yarn, and added alternating stripes using the Fibonacci sequence.  The blue stripes were in seed stitch, adding a textural element too.

I made bread dough in the bread machine, and made a bit of a mistake.  I added too much water, so when the dough cycle was complete, I had a runny dough.  At this point I thought I didn't have much to lose, so I added about a cup or so of flour, restarted the cycle and let the machine run about halfway through the cycle.  I stopped the machine, and let the refortified dough rise for about 20 minutes.  It worked, and the rolls were yummy!

I also gave in to my childhood memory, and made baked macaroni and cheese, adding some sharp white cheddar to the mixture.  YUM!

Portia and I watched Braveheart and started knitting another hat while Joel made pizza dough.  I'm behind on movies and had been wanting to watch this for quite a while.

A quiet, productive day.  I hope it's good preparation for the busy week ahead!

Sunday morning post-conference

My peeps have come, and most of them are now nestled back at their homes across the Midwest.  We had a great time, learned a lot from each other, and got in some quality time while sharing beers/single malt scotches networking. I organized a small yarn crawl (2 shops, the Studio and Misknits).  This morning I was catching up on my blog reading, and if only I had read Mason-Dixon earlier, I could have organized a lovely revue for my peeps, rivaling the Yarnery Family Singers.

Random (or maybe not so) thoughts

Yes, lots to touch on today.

I don't usually talk about my day job here.  But lots of changes are going on there.  My supervisor is retiring soon,  my night/weekend supervisor is moving to Florida, and the building project affects my floor first.  Needless to say, I'm doing a lot of planning and planning for contingencies.  My stress level is pretty high, but I'm trying to keep it constructive, not destructive.  Wish me luck!

I am keeping up with the knitting and should finish a lovely sweater for my nieceling (1st bday is 30 May -- Friday!) today.  Photos to come when completed.

I've been making sweet tea frequently.  It's keeping me sane in a way -- ties me back to childhood and keeps my southern sensibilities intact. 

More on food:  our friend Mark spent the night here Friday night.  He lives in St. Louis and was visiting family in Wichita this weekend.  We were delighted to have him stay over Friday night.  The menu included grilled steak, grilled corn on the cob (with butter and herbs tucked around it in the foil), new potatoes with butter and dill, a salad (with craisins and other yummy things in it), homemade rolls, and brownie pudding with vanilla ice cream.  Oh, and gin and tonics and when the gin ran out, vodka tonics.  Mark enjoyed it very much, and I think the homemade rolls just sent him over the edge.  I won't say how many he ate, but I'm glad for him that he swims laps every weekday!

Before he retired for the night, Joel got the sourdough batter going for waffles, so we all had blueberry waffles for Saturday morning breakfast, and Mark and I enjoyed bacon with them.  We may not do fancy, but you'll leave our house well-fed!

We enjoyed sitting out on the deck for a while Friday night, and my love of nature became evident -- I forget that other folks don't take the same interest in birds and other critters.  Mark lives in the city proper (where we live in the named city, but far out and have a field back of our house), and may not see the same mix of birds and critters we do.  Speaking of the critters, the birds are still going through a lot of seed, the orioles really love the grape jelly, and the hummers are not so crazy about the new pretty feeder.  We're going to put up the trusty old red feeder, which should lure them back.

The furriest one has enjoyed the nice weather too.  It's been fairly cool this spring, so we're only now enjoying the deck.  She and her friend Mooch like sitting out on the deck, and when we're out there, they sit near us or underneath the furniture.  Mooch has been around a lot this weekend -- I think he enjoys the scritches as well as the food we give out.

This and that

  • Sunday morning I overslept.  I woke up about 3 minutes before choir rehearsal started.  Instead of rushing to get ready, I grabbed my cell and sent a txt message to my choir director. 
  • I skipped church directly.  Instead, we went grocery shopping, did some housecleaning, and I did some cooking and baking, including:
    • homemade rolls
    • cornbread (in a cast-iron skillet)
    • chili (portioned out for the rest of the week)
  • Knitting.  I've been knitting on a hat for a friend with cancer.  His hair has fallen out, so I've got to get this hat finished and to him!  For my knitting friends, this is the Koolhaas Hat and I'm knitting it with ArtYarns Ultramerino 8, color 106. This dear friend has a terrific sense of humor and style. 
  • I'm also working on socks, a baby blanket, and picked up yarn and patterns for two more baby projects for my niece.  The report on the latest sweater and hat is that they fit and are darling!
  • My sewing room is a mess.  A huge mess.  I had bought some plastic storage bins, and I spent some focused time Sunday putting yarn in bins (lace projects, nieceling projects, sock yarns).  Is it still a mess?  Yes.  Have I made progress?  Yes.  Enough?  Nooooo. 
  • It's the end of the academic semester at my university, which means many projects are coming to a head, the students are frantic, and the temptation to drink coffee all day for energy is pretty high.  Instead I'm struggling with focus, drinking enough water, and trying to keep working away.  It'll get done. 
  • I won't mention the looming building project, except to say that my tendency to plan ahead has been noticed in a good way.  So far. 
  • Ergh.  I'll be out of town all of next week.  It's for a good thing -- a leadership development program.  I'm looking forward to it and I'm apprehensive all at the same time.  I'm bringing lots of knitting if I'm allowed to keep my hands busy while my mind races ahead.
  • I think I mentioned I had surgery on 2/29/2008.  This is what was done along with a few other "girl stuff" things.  I'm happy to report that I've had two cycles and everything's going really well.  The pain issues haven't been totally eliminated, but things are MUCH better.  I'm tempted to give away some of my supplies, but I'm going to wait about six months before I do. 
    • One of my friends had the same procedure, but apparently the directions about the recovery were not as clear from her doc.  She did too much too soon, and took a very long time to recover.  I was given some really great pain meds, told to rest, not make major decisions for a few days and to not lift anything more than 10 lbs for 3-4 days.  Some women go back to work the next day.  I'm not so crazy about that in a society that makes it too easy to be a workaholic (and you'll see my photo next to that word in the dictionary).  The rest made recovery much easier.
  • Car follow up-- yes, I got my little red back from the body shop and it's looking and running great.  While I enjoyed driving the "pimpmobile" as my friends called it (the Chrysler 300 rental), I'm happy to have Li'l Red and it's MPG.  Speaking of MPG, gas prices hit $3.23 today in Kansas City.  Egad!

A gift of sorts

There's just something about macaroni and cheese.  I can't remember if I've written about this before, but it's worth writing again if I did.  Macaroni and cheese was a staple of my childhood.  When Mom worked at DuPont, she'd sometimes leave one made up in the fridge for Dad to bake.  Or he'd make it out of the Blue Box (Kraft) if he didn't take me to Scotty's Drive In or up to Grandma's for dinner.  Those are stories for another time.

Some children are spoiled with toys, but in my family, we were spoiled with food.  Aunt Julie often fixed macaroni and cheese for family gatherings, and I loved her version.  Aunt Bessie, my Grandma Green's sister-in-law, fixed wonderful macaroni and cheese.  And my mom's mom made wonderful mac and cheese too.  Hmm.  I'm probably still carrying a lot of all of that on my hips 40+ years later.

Today was gray, rainy and cool.  And I just wanted some home-baked comfort that wouldn't take the whole evening to prepare.  So I made some mac & cheese for us.  While Mom's recipe was good, one of her friends, Clara, had one better, so Mom convinced her to share it.  I tarted it up a little, and I often take it to pot lucks.  While I joked that it was a family secret, I'm going to share it here.  Just if you're going to a pot luck where I'm going, please don't bring it.  'Cause I got dibs.

LGG's ribsticking, comfort-lovin' Macaroni and Cheese

6 oz dry pasta (can be macaroni, fusilli, whatever)
Velveeta (sad but true)
Evaporated milk -- about 4-5 oz.
about 1/2 stick butter
salt (for the water) @ 1/2 tsp
pepper
the superduper secret ingredient:  about 1/2 tsp. Coleman's dry mustard
about 4-6 oz. shredded sharp cheddar

This makes enough to fill an 8x8 glass pan
turn oven to 400 degrees
spray pan with non-stick spray or you'll regret it deeply

Bring water in a large pot to boil, add salt, then add pasta and cook until pasta is done (and preferably beyond al dente, but not to bloated waterlogged tasteless blobs)

Drain off about 2/3 of the water (secret number one of this dish).
Add:  butter, the evaporated milk, and about 1/4-1/3 block of large block of Velveeta

return to heat, stir, turn down heat to low/medium low and stir occasionally until Velveeta is melted.  The more art-than-science part: it needs enough liquid (milk) to easily stir around in pot, but not so much that it's soupy.  How do you know?  You just do after making this many times. 

After the Velveeta is melted, stir in about 1 tsp of pepper (less if you don't like pepper) and the dry mustard.  Pour into pan, and sprinkle with the sharp cheddar.

If you're afraid of bubbling overflow, put a cookie sheet or other baking pan on the rack below the dish.

Put into oven and bake for about 25 minutes or until the cheddar is the desired shade of bubbling cheese crust. 

Let set for about 5-9 minutes before serving.

Tips:
I have made this in huuuuge batches.  However, I can tell you from experience that it's best to only make a batch involving 2 lbs. or less of dry pasta (no more than will involve a 9 x 13 pan) and no more than 1 big block of Velveeta at one time.  Why?  Because it's all too easy to scorch the milk/butter/Velveeta mixture in the pursuit of melted Velveeta.  It's also difficult to get the mustard evenly distributed and who wants to bite into a small glob of mustard?

Why Velveeta?  Because as Kraft advertises, it melts evenly and smoothly.  I'm really not into cheese food, but Velveeta for this recipe is the exception.  I do my cheddar thing on top, and I'm happy.  Sometimes I'll add some Parmesan on top, but usually sharp cheddar makes me pretty happy.

I'd like to think all of those women relatives who shared their gifts with me would enjoy this version too.

Straight into the lap

This looks like a very cute idea.  Very.  Except that I can guarantee you that the cookie would wind up in my lap, oh, every other time I sipped my hot drink.

Oh wait.    And they make it for left handed folks like me!  However, I don't think this is made for klutzes.

Mickey's Peach

Alas, Disney marketing has saturated the produce section.  This peach sticker tells me that Mickey endorses it, but tells me nothing about its quality or state/country of origin!

How many cents of my purchase went to the Disney enterprise?  And why are we doing such a poor job of getting people to eat fruit that we need to have Disney characters endorsing said fruit?  Next thing you know, green beans and spinach will have Minnie Mouse and Donald Duck ties around them.  Eggplant will have Belle from Beauty and the Beast. 

Egad.  I miss the days when Dad would bring a bag of peaches home -- his brother would stop by his work, or one of the farmers he knew would bring a bag of fresh picked peaches by when they ran into town for supplies.  No labels.  No refrigeration.  Locally grown.  Rinse, cut open, eat.  The juice would run down your chin and onto your shirt.  Yum.  No Mickey Mouse needed.
