Since Friday we've had sleet, freezing rain, snow, more sleet, more freezing rain, etc. etc. I'm off work today because of the MLK holiday and Joel decided to stay home because of the many wrecks and fatalities reported on the news this am. I've not been out of the house since I came home Friday afternoon.
However, I've been knitting. And I've rediscovered the joys of the dough cycle on the breadmaker. We've had a breadmaker for years, but I don't like the hole the paddle leaves in the bottom of the loaf. Joel makes sandwich bread often and loves it. This weekend I decided to try using it to mix up the dough and do the first rising. I like the texture of the bread much better than what I've been getting when I don't use the cool rise method. I made a loaf (huuuuge loaf!) earlier this morning for Joel to use for sandwich bread and I have a second batch in the breadmaker to prep rolls.
I've been thinking about how I can use this to have hot rolls with dinner too-- or have dough ready to roll out, make up into cinnamon rolls and rise, then bake in the morning. Without having to get the dough out of the fridge at 3am for it to warm up. Lots of ideas, obviously.
I hope they all don't go to my waist!

Can you believe we are off work again! I feel better about my poor evening folks (who had to work on Sunday night) not having to be at work tonight.

While I would love to have hot, fresh cinnamon rolls in the mornings, on occasion, there is no way I'm getting up that early to have the ready. I'm lucky to make it out the door on time as it is.

I've a breadmachine for years (#3 now,however)and use the timer/dough cycle routinely. So you could have dough in the a.m. ready for the last quick round of prepping, and eating within an hour. You could speed the rising over a pan of hot water.
