Today I made several special items for today's Easter dinner. Joel got me a little sliced ham yesterday, and before I went to church early this morning, I rubbed some brown sugar and dry mustard on it, then covered all with some orange juice. It baked up nicely.
Veggies for dinner were mashed potatoes, steamed fresh asparagus, and shoepeg corn (thank you Green Giant boil-in-bag!).
We also got strawberries yesterday, and I just love pound cake with fresh strawberries. I thought I'd make a pound cake - I don't know when I've made one. I used a recipe from Secrets from the Southern Living Test Kitchens and it is just wonderful! Of course, I had a little glitch. I forgot to line the bottom of the tube pan insert with some waxed paper or foil. As the cake baked, I smelled something and thought, "surely the cake isn't burning so soon??" Turns out some batter dripped down -- quite a bit, then caught fire on the oven element. I had a Teflon sheet underneath the element which caught the mess. I maneuvered things so the batter wasn't on the element, then moved the mess out of the oven, put out the fire, then cleaned off the Teflon sheet.
Thank goodness for attic fans -- it was warm enough today that I could run that and get rid of the smoke -- and the smoke alarm didn't go off, so it wasn't quite THAT bad, just bad enough.
Despite the drama, the pound cake is delicious. The recipe is called "Million Dollar Pound Cake." Yum.













It all sounds so yummy, especially the pound cake. I also love ham, mashed potatoes--heck, I like corn and aspargus too.
I made a pork and bean bake dish last night to celebrate my father-in-laws birthday. The porkchops turned out so tender, and of course, I made deviled eggs out of some of our prettily decorated boiled eggs. I felt kind of bad about the eggs. I timed the egg decorating poorly. The dye wasn't even dry before I said, "Take a picture because I am making most of these into deviled eggs." :o)

Oh, I'm sorry, DQ, I keep forgetting you looove deviled eggs. ;o) I offered to make them if you gave up school work and came over to watch movies with us.
